Among the many numbers printed on a serious honey lab report, one stands above the rest. It is small, often a single decimal, and it quietly decides whether a jar of honey is stable, alive, and worth your money — or a problem waiting to happen.

That number is water content in honey, also called moisture. Beekeepers obsess over it. Bottlers test for it before sealing a single jar. Customers rarely hear about it. We think you should.

This is a short, careful guide to what water content really means in raw honey, why it matters more than any other single metric, and how Haydara uses it as a quiet line between honey we ship and honey we hold back.

What "Water Content" Means in a Honey Jar

Honey is mostly sugar. The two main ones — fructose and glucose — make up roughly seventy to eighty percent of every spoonful. The rest is a small but important mix of water, enzymes, pollen, organic acids, and trace minerals.

The water portion is what we are talking about here. In a well-made raw honey, water content sits between roughly 16% and 18.5%. That narrow band is not arbitrary. It is the range in which honey is dense enough to resist spoilage, light enough to spread, and stable enough to keep for years without refrigeration.

Go a little above that band, and the honey becomes a different product. Go below it, and you risk something most customers do not realise can happen to natural honey.

Why This One Number Matters More Than the Others

Lab reports for honey can run to a dozen markers — sugar profile, HMF, diastase, electrical conductivity, ash content. We respect all of them. But water content is the first one we look at, every time, for one reason: it is the metric that decides whether the jar is shelf-stable.

Honey that is too wet ferments. The yeasts naturally present in raw honey are dormant in a low-moisture environment. Raise the moisture even a couple of percentage points, and those yeasts wake up. The honey gasses, develops an alcoholic note, and eventually loses its character. It is not dangerous, but it is not the jar we promised the customer either.

Most other honey quality problems can be managed with selection and care. Fermentation cannot. Once a jar ferments, it is finished. That is why water content is the gate we will not let a batch through without checking.

Where the Water Comes From

The water in honey is not added by anyone. It is the residue of nectar.

When bees gather nectar from a flower, they are bringing back a liquid that is often seventy to eighty percent water. Back in the hive, they work it down — fanning their wings, moving it from cell to cell, slowly evaporating the moisture — until it reaches the dense, viscous state we recognise as honey. The bees know the job is done when they cap the cells with wax. A capped cell is the bee's signal that the moisture is safely below the line.

This is why when honey is harvested matters as much as where it comes from. If a beekeeper takes the frames too early — before enough cells are capped — the harvest carries extra moisture. The honey may look beautiful, taste fine on day one, and still ferment three months later in the customer's pantry.

This is one of the quiet differences between a careful small producer and a rushed commercial one. The careful one waits.

How Climate and Season Move the Number

Egyptian honey has a small advantage here. Our climate is dry through most of the harvest season, which helps bees finish the evaporation work properly. Compare that to humid coastal climates where bees struggle to drive moisture down to a stable level, and you start to understand why raw Egyptian honey tends to test well on this metric.

That said, season still moves the number. A wet spring or a humid harvest week can lift moisture by half a point or more across a region's hives. A dry, hot stretch can pull it back down. We watch the weather around harvest as carefully as we watch the bloom calendar, because both feed into what reaches the jar.

Marjoram honey, in particular, gets a lot of attention from us on this front. Marjoram blooms in a window where Egyptian summer heat is already pressing in, which helps the bees finish their work cleanly. What Happens When the Number Is Too High

If water content climbs above roughly 19%, the risk of fermentation rises quickly. Above 20%, you should expect it.

The signs in a jar are subtle at first. A faint sour note where there should be floral sweetness. Tiny bubbles forming near the surface. A pressurised lid that hisses when opened. A texture that has become a little foamy or runny in a way that does not match the season.

None of these mean the honey is dangerous. They mean it has changed into something else, and the brand that sold it failed to do its job. What Happens When the Number Is Too Low

Less commonly, water content can sit too low — below roughly 15.5%. This usually means the honey was over-processed: heated, evaporated, or otherwise pushed past where natural honey wants to sit.

You sometimes see this in commercial pasteurised honey where producers have driven moisture down to extend shelf life on supermarket shelves. The trade-off is that very low moisture honey tends to crystallise faster, often unevenly, and the aroma sits flatter on the tongue. The enzymes that give raw honey its character do not survive that kind of treatment well.

If you are reading a lab report and the moisture sits at 14% or under, ask the producer how they got there. The answer matters.

How We Test for It at Haydara

We test water content twice for every batch we accept. First, when the beekeeper proposes the harvest — using a refractometer, the small handheld instrument every serious bottler keeps near the workbench. A drop of honey, a glance through the eyepiece, a number on the scale. It takes about thirty seconds.

If the number falls outside our acceptable range, the batch does not come into the bottling room. Full stop. No negotiation, no "let us blend it down with a drier batch." A batch that arrived too wet is sent back to the beekeeper, returned to a different grade, or held until the bees finish what they should have finished before we ever opened the frame.

The second test happens in the bottling room itself, before the jars are sealed. It is a final check on the same number, on the same batch, from a different sampling point. We log it. We file it. We know what every jar that left our line measured at, and we can tell you on request.

What This Means for the Jar in Your Kitchen

You will probably never own a refractometer. You do not need to. But here are a few things you can read from a jar without one:

A raw honey that has sat in your pantry for a year and remains thick, settled, and aromatic — possibly crystallised, but evenly — is a jar whose water content was right when it was sealed. You can trust it.

A honey that has gone bubbly, runny, or sour-smelling within months of opening was likely bottled too wet. That is a producer problem, not a storage problem.

A honey that crystallised in odd, watery layers — a syrupy liquid pooling above a granular lower half — usually had a moisture issue in the original harvest. Real, clean crystallisation tends to be more uniform.

A Soft Close

Water content is the kind of detail that does not fit easily on a label, but it shapes everything that does. The texture you spoon into your tea. The aroma that lifts when you open a new jar. The shelf life you forget to think about because nothing has gone wrong.
